Hearty vegan breakfast
This has become one of my favorite meals to make clothes free. Be careful and wear an apron if your fryer tends to pop oil.
- 1 ripe plantain
- 2 small bell peppers
- 1 meat alternative (tofu) sausage
- 1 1/2 tablespoon coconut oil
Peel and slice the plantains about 1/2 inch slices not too thin. I slice them at a slight angle which seems to help it cook faster. Rinse and cut the peppers (I like to use a different colors to add some variety to the look of the food.) in half and remove the seed and center. Slice the peppers into thin strips. Slice the sausage into half inch slices like the plantains.
Place the plantain into a medium frying pan on highest flame with the coconut oil. Turn the plantain slices occasionally until golden brown and cooked through. Remove the cooked slices from th frying pan using a slotted spatula or spoon draining the oil. Place on a paper towel to absorb any remaining oil.
Once the plantain slices are removed from pan, add the peppers to the frying and sautée until tender on a medium flame stirring to prevent them from burning. Remove peppers and drain on paper towel. Add sliced sausage (tofu) and cook until heated through.
Plantains can be mashed before serving. Season with sea salt, garlic salt and a dash or two of hot pepper sauce for a salty sweet spicy hearty vegan breakfast.
